2 Tier Wedding Cake

In this class will we be layering and covering a real cake and a dummy cake. We will make a selection of flowers including roses, small peonies, hydrangeas, primrose, anenomes, berries and leaves. We will also pipe royal iced pearl swags and assemble and decorate the cake.

Day 1:
We will start the day with working on the basics. Splitting, filling and crumb coating an 8" cake. Then I will show you how to achieve a professional finish to your iced cake and 6" dummy tier. In the afternoon we will be making a start on the many flowers that will adorn this cake.

Day 2: 
The second day will be all about the flowers. I will teach you how to make large sugar roses, wired hydrangeas, small peonies, anenomies, berries and leaves.

Day 3: 
After finishing our sugar flowers we will be working with royal icing to pipe a pretty pearl garland around the bottom tier. I will show you how to dowell the cake, add a seperator and stack to tiers together securely. We will then finish by arranging our flowers around the middle of the cake.

All materials, tools, aprons and edibles are provided for you to use during the classes. Drinks are provided throughout the day and afternoon tea (sandwiches & cakes) is also included for full day classes only. The only thing that you may want to bring is a notepad and pen.
